Refreshing Summer Corn Salad

Summer Corn Salad

Yield: 4 Servings

5 teaspoons olive oil, divided

1 tablespoon lime juice

¼ teaspoon salt

¼ teaspoon hot pepper sauce

1 ½ cups fresh corn

1 cup diced tomatoes

½ cup finely chopped cucumber

¼ cup finely chopped red onion

2 tablespoons minced fresh basil

½ cup crumbled feta cheese


1) In a small bowl, whisk together 4 teaspoons of oil, the lime juice, salt and pepper sauce; set aside.

2) In a large skillet, add the remaining oil and stir in the corn. Cook over medium-high heat until the corn is tender. Transfer to a salad bowl; cool slightly. Add the tomatoes, cucumbers, onions and basil. Drizzle the dressing over the top and toss to coat.

3) Let stand for 10 minutes before serving or refrigerate until chilled. Sprinkle with feta cheese just before serving.

5 Layer Greek Dip

If you like hummus and Mediterranean flavors, you will love this 5 Layer Greek Dip! I recently brought some to a family get-together and everyone enjoyed it. It’s really yummy and so simple to put together! This recipe was a Pinterest find and there are no exact measurements…but you don’t really need them. You really can’t mess it up!


Hummus (homemade or store bought)

red bell pepper

kalamata olives


feta cheese

fresh dill

Dip top
1. Spread the hummus about 1-2 inches thick in the bottom of a medium sized serving dish.
2. Finely chop the bell pepper, kalamata olives and cucumber.
3. Sprinkle evenly over the hummus.
4. Crumble feta cheese on top.
5. Sprinkle bits of chopped dill to add a finishing touch.
6. Serve with pita bread or pita chips and Enjoy!
