Special K Dessert Bars

special k bars blog dispThese are one of my favorite no-bake treats, so no heating up the oven—A nice perk during the warm summer months. A wonderful family that I used to nanny for during my college days shared the recipe for these yummy dessert bars with me, and I’ve been making them ever since!

special k bars cerealStart off by putting 6 cups of Special K cereal in a bowl; Then set it aside.

Next, melt the sugar and Karo syrup in a saucepan over medium-low heat, just until the sugar dissolves. This takes about 5-8 minutes.

special k bars peanut butterRemove the pan from the heat and stir in the peanut butter.

special k bars wet and dryAdd the peanut butter mixture to the cereal and stir just until everything is combined.

Pack the cereal mixture into a greased 13x9x2 dish. I grease mine with cooking spray.

Onto the topping! Melt together the chocolate chips and butterscotch chips in a double boiler until creamy.

special k bars doneSpread the chocolaty mixture evenly over the bars. Let the bars cool until the chocolate starts to harden {usually a few hours}. Helpful hint— If you can’t wait that long {like me!} then stick them in the fridge for a little bit and the chocolate will harden quicker.

Cake Batter Chocolate Chip Cookies

cake batter cookies coverI recently came across this fun variation of the traditional chocolate chip cookie, and decided to bake up a batch of these colorful sprinkle filled treats. These tasty cookies have a nice texture—soft in the middle, crunchy on the outside. They would be a fun cookie to make with little ones or to serve at a children’s party {“big kids” will enjoy them too!}.

In a large bowl, sift together 1 1/4 cups of flour, 1 1/4 cups of yellow cake mix and 1/2 teaspoon of baking soda; Set aside. In a separate bowl, cream together 3/4 cup of softened butter, 1/2 cup of granulated sugar and 1/2 cup of brown sugar. Add 1 egg and 1 1/2 teaspoons of vanilla; Mix until smooth. Add the flour mixture to the wet ingredients. Mix just until combined, making sure not to over-mix. Fold in 1/2 cup of semi-sweet chocolate chips, 1/2 of white chocolate chips and 1/2 cup of sprinkles. Chill the dough for at least 1 hour {it can be refrigerated for up to 4 days}.

Preheat the oven to 350 degrees. Scoop rounded tablespoons of the cold dough onto an ungreased cookie sheet. Bake for about 10-12 minutes. The edges should be slightly brown and the center will appear soft. They will set as they cool.

Peanut Butter Swirl Brownies

Peanut Butter Swirl Brownies DisplayBrownies are a classic chocolaty dessert that I enjoy year round. I discovered this recipe on Food Network prior to my “mommy days” when I had more free time to do things like watch T.V. These brownies are rich, full of delicious flavor and perfect for the chocolate-peanut butter combination lover. In other words…YUM! So naturally, they have earned a place in my recipe book collection and I am here to share them with you today!

bowl batterTo begin, you will need a double boiler. Melt together 2 sticks of butter, 4 ounces of semi-sweet baking chocolate and 1 package of semi-sweet chocolate chips {reserve 1/2 of cup of these chocolate chips for later use}. Set the mixture aside to cool. Then in a large bowl {a stand mixer if you have one} beat together 3 eggs, 1 tablespoon of vanilla and 1 cup + 2 Tablespoons of sugar. Gradually add in the chocolate mixture until smooth. In a small bowl sift together 3/4 cup of all-purpose flour, 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Add the dry ingredients to the wet ingredients and mix, but don’t over-mix.

Now you will need those chocolate chips. In a small bowl, mix them together with 2 tablespoons of flour. Then stir them into the brownie batter.

pb dollupsNext, pour the batter into a greased 9×13 pan. Spoon over top about 12 tablespoons of creamy peanut butter.

swirledThen use a knife to swirl the peanut butter into the batter. There is no perfect way to do this, so be creative!

bakedBake at 325 degrees for about 25 minutes. They may need an additional 5-10 minutes depending on your oven. Take them out, let them cool and ENJOY!!!
