9-Ingredient Dinner Meal

I found two great recipes on Pinterest a few weeks ago that I thought would pair well together to make a tasty “chicken and ranch potatoes” dinner. Both recipes are full of flavor, easy to make and only require a few ingredients!

I prepared the potatoes first because they take a little longer to cook…

First you’ll need to preheat the oven to 350°. Then in a large bowl mix together 1/2 Cup of ranch dressing, 1/4 Cup of cheddar cheese, 1/4 Cup of cooked and crumbled bacon, 1 Tablespoon of dried dill weed, and a dash of salt and pepper. Peel and chop 2 pounds of potatoes (1 used 6 medium potatoes) and then add them to the ranch mixture. Stir to coat the potatoes.  Pour the mixture into a greased 9×13 baking dish and cover with foil.  Bake for about 1 hour, stirring the potatoes half-way through. Then raise the oven temperature to 400°, remove the foil and sprinkle on top a 1/4 Cup of cheddar cheese. Bake for about 10-15 more minutes or until golden brown and bubbly.

Remove from the oven and garnish with 1/3 Cup of chopped scallions. These potatoes are cheesy and loaded with wonderful flavor!!! My husband and 1-year old loved them!

Now onto the chicken…

 First you need to line a 9×13 baking dish with foil and then grease it with cooking spray. In a shallow bowl mix together 1 (.7 ounce) packet of dried Italian dressing mix and 1/2 Cup of packed brown sugar.  Then you will need 4 chicken breasts. Dip and press each chicken breast into the mixture coating both back and front.  Put the chicken in the prepared baking dish and cover with foil.  Place the chicken in the oven the potatoes are already cooking in, and bake for 50-60 minutes (conveniently at the same 350º temperature as the potatoes).

Remove the chicken from the oven. I did this before I turned the oven up to 400° for the potatoes. I covered the dish with foil to keep it warm while the potatoes finished cooking. Such an easy dish and only 3 ingredients!!!

Paired together it made for a yummy dinner that my whole family enjoyed!!!

Roasted Ranch Potatoes

The recipe I used can be found here (I adapted it slightly).

Ingredients:

2 pounds of potatoes (washed, peeled and chopped into chunks)

1/2 C. ranch dressing (bottled, not packet)

1/2 C. shredded cheddar cheese

1/4 C. crumbled, cooked bacon

1 TBSP. dried dill weed

1/3 C. scallions, chopped (about 5 scallions)

Dash of salt and pepper

Directions: Preheat the oven to 350°. Then in a large bowl mix together 1/2 Cup of ranch, 1/4 Cup of cheddar cheese, 1/4 Cup of cooked and crumbled bacon, 1 Tablespoon of dried dill weed, and a dash of salt and pepper. Add the chopped potatoes to the ranch mixture and stir to coat.  Pour them into a greased 9×13 baking dish and cover with foil.  Bake for about 1 hour, stirring the potatoes half-way through. Then raise the oven temperature to 400°, remove the foil and sprinkle on top a 1/4 Cup of cheddar cheese. Bake for an additional 10-15 minutes or until golden brown and bubbly. Garnish with the scallions.

Simply Great Chicken
